SMTP stands for Simple Mail Transfer Protocol. It is the mechanism by which an email client program sends emails to an outgoing mail server (SMTP server) for delivery to the intended email address.
When you set up an email account in your email software, you'll need to use the SMTP server provided by your Internet Service Provider (ISP) as your outgoing mail server. Below is a list of common SMTP servers in Australia:

FAQ
Why can't I use Ilisys's SMTP server?
Most Australian Internet Service Providers (ISP) block the SMTP access to prevent spam. Within their networks, you won't be able to bypass their servers to send emails through Ilisys's SMTP server. So it's practical to send emails through your own ISP's SMTP server directly.
I travel a lot. Is there a way that enables me to send emails without changing the SMTP server all the time?
